Ever wonder why your bread comes out great one day and then totally flops the next? Most of the time, it’s not your recipe. It’s your oven. Most home ovens are a bit chaotic. The thermostat swings by 10 or 20 degrees without you even noticing. In the pro world, those little jumps are a nightmare. You end up with a crust that’s dried out like a rock, but an inside that’s still raw. That’s why we use shortwave infrared heaters. Instead of just blowing hot air around—which is what convection does—infrared pushes energy straight into the bread. It’s immediate. No waiting, no guessing.
Getting the Temperature Right
The secret to avoiding a total baking disaster is something called “low thermal inertia.” That’s just a fancy way of saying the heater needs to react fast. We use quartz-glass lamps because they hit the target temperature in seconds. And the best part? When the controller tells them to stop, they stop. Almost instantly. If you’re using a heater that takes five minutes to cool down, you’re in trouble. By the time the oven realizes it’s too hot, you’ve already burnt the outside of your loaf while the middle is still cold.
The Nitty-Gritty Hardware
To make this work, we pair these heaters with PID controllers and K-type thermocouples. It sounds technical, but it’s basically just a very smart brain and a very sensitive thermometer. One thing to watch out for: the wiring. I’ve seen people use thin wires to save a few bucks, but that creates a bottleneck. It messes with the voltage and gives you wonky temperature readings. Not worth the risk. You also have to be smart about the space. If you cram too much power into a tiny oven, you’ll get hot spots. We prefer to “zone” the heaters. That way, you can crank the heat on the bottom while keeping the top gentle.
The Trade-offs
Look, nothing is perfect. High-precision gear has its quirks. Those quartz lamps are fragile. If you’re cleaning the oven and accidentally bump a tube? It’ll crack. It happens. Then there’s the glare. Those lamps are bright—really bright. We put heat-resistant glass shields in front of them to protect your eyes. They do take away a tiny bit of the heat efficiency, but it’s a fair trade to keep everyone in the shop safe.
