
Stop Waiting on Your Oven to Heat Up
If you’ve ever run a heavy-duty bread oven, you know the frustration. You pull out one batch, slide in the next, and then… you wait. That slow crawl back up to temperature is a killer. It’s usually because relying on hot air alone just takes forever to soak into the oven walls and the dough. That’s why we started using infrared (IR) auxiliary elements. Instead of waiting for the air to warm up, these elements beam heat directly into the product and the oven walls. It’s like the difference between warming your hands by a space heater versus standing in the sun.
Getting the Heat Back Fast
We don’t use these to replace your main heat source. That wouldn’t make sense. Think of them more like aturbo boost. We use short-wave or medium-wave IR emitters because they punch through the surface of the dough way faster than air ever could. They’re perfect for that initial ramp-up or that annoying temperature dip that happens every single time you swing the oven door open. It just gets you back to baking speed, fast.
The Nitty-Gritty on the Hardware
We build these things with high-purity quartz glass so the heat actually gets out. Inside, there’s a tungsten filament filled with halogen. This stops the filament from evaporating too quickly, which means the tubes actually last, even when you’re pushing them hard. And we kept the connections simple. We use standard R7s or Sk15 bases. Why? Because nobody wants to rewire an entire control panel just to swap out a burnt-out tube. You just pop the old one out and slide a new one in. Easy.
A Few Things to Watch Out For
Now, there are a couple of catches. Adding these elements means you’re pulling more power. Before you dive in, just double-check that your breakers and wiring can handle the extra load. You don’t want to trip a switch in the middle of a rush. Also, give the lamps some breathing room. If the housing gets too cramped, the sockets can overheat. One last tip:keep the reflectors clean. If flour or grease builds up on the shielding, it absorbs the heat instead of bouncing it into the oven. That’ll kill your tubes way faster than normal wear and tear. Keep it shiny, and it’ll keep working.
