If you’ve ever struggled with bread that’s either burnt on the outside or soggy in the middle, you know the struggle. It’s all about the heat. To get that gold-standard crunch without drying out the inside, we use 300W short-wave infrared (SWIR) bulbs. Here’s the trick: most ovens just heat up the air. But infrared is different. It ignores the air and sends energy straight into the dough. Why it actually works These lamps use short-wave radiation, which is basically a fancy way of saying the heat can punch through the surface of the bread. It skips right past that initial layer of moisture and hits the outer dough hard. This triggers the Maillard reaction—that’s the magic chemistry that gives you a deep, brown, toasted crust—while the heart of the loaf stays soft and airy. The nitty-gritty on the build We settled on 300W because it’s the sweet spot for medium-sized ovens. Not too weak, not too aggressive. The bulbs are made from high-purity quartz glass. Why? Because they need to handle the shock of heating up and cooling down quickly without cracking. We also use a halogen gas fill. It keeps the filament from wearing out too fast, so you aren’t replacing bulbs every other week. Plus, they usually fit into R7s or similar snap-in sockets. If one pops, you just swap it out and keep moving. No drama. A few things to watch out for Now, this kind of power isn’t without its quirks. Since the heat is so intense, you can easily scorch your bread if it’s sitting too close to the element. You’ll want to be really careful with your rack distance and your timers. If your conveyor belt is moving too slowly, you’re going to end up with a crust that’s way too thick. And one last tip: make sure your wiring is up to the task. These bulbs pull a decent amount of current the second they kick on, and you don’t want to be staring at a tripped breaker right in the middle of a rush.
